Chocolate Cookies

Because we all need to eat sometime or another. Chocolate cake especially welcome.

Chocolate Cookies

These are like biscuits but softer.

60g softened butter
60g soft light brown sugar
1 generous tsp golden syrup
85g self raising flour
cocoa (it must be cocoa, not drinking chocolate - Green and Blacks for preference.)

Beat the butter and sugar together with the syrup until light and well amalgamated.
Weigh the flour then remove 1 rounded table spoon of the flour. Put it back in the packet.
Add cocoa to the flour until it weighs 85g again.
Sieve this into the butter/sugar mixture and stir until well mixed.
Form the mixture into 9 equal balls and place on a greased baking sheet. Flatten them a bit.
Bake in a slowish oven (about 150-160c) for around 8 - 12 minutes.
Keep checking until they started to crack slightly. They must not cook too much.

These are better than any chocolate biscuits I have ever eaten - especially still warm from the oven!

Mmm they do sound good. I like that the quantity doesn't make enough to feed an entire army, I reckon I could just about manage to eat 9. At first I wondered if you meant tablespoon or teaspoon for the syrup, but looking at the proportion of other ingredients teaspoon seems right.
