Coconut cake

Because we all need to eat sometime or another. Chocolate cake especially welcome.

Coconut cake

If you like coconut this seems to be liked by everyone so thought I would share, just baked one fresh this afternoon, very easy and quick so plenty of knitting time left in the day! :lol:

3ozs caster sugar
3 ozs margarine
2eggs
4ozs self raising flour
1 ozs desiccated coconut


Cream together marg and sugar.

Add 2 eggs one at a time and if curdles add tablespoon of flour

Fold rest of flour and coconut and fold altogether

Turn into 1lb loaf tin lined with parchment paper

Bake in gas 4, 150 degrees c fan oven for 45 minutes or until skewer comes out clean

If you like glacé icing you can mix 3ozs icing sugar with 1 tablespoon of warm water and once cake has gone cold cover with icing, however quite often I eat without icing so I can believe its healthy! Enjoy xx
